Hey, No, you can't do 3D camera movement like in c4d or blender. For that, you need a 3D model. But you can add some perspective movement on your rig in fake 3D using shape layers.

I still don't understand what´s influnece and what does it do
Well, influence in speed graphs is basically how much the one side of the handle of a keyframe is influencing the speed between two keyframes. Which is directly related to acceleration. So when you are extending the one side of the handle, the peak of the curve shift towards the next keyframe, right? That means you are controlling how much time it's going to take to accele and reach the max speed and then decelerate until the next keyframe. So this is how the % of influence controls the transition between keyframes.
